As the seasons change, Joël Césari reinvents his cuisine, embracing new colours and new flavours. Summer raspberries, Remontant strawberries that can be enjoyed right through to October, chanterelles and ceps in the fine days of autumn, game in winter, spring asparagus... The chef takes you on a wonderful journey through nature!

Listening to the chef talk about the region and its produce is like embarking on a gourmet journey into the heart of a land whose fish, poultry, charcuterie, vegetables, mushrooms, cheeses, and vineyards he knows by heart... And as the seasons pass, you'll be treated to pike, Bresse chicken, Morteaux sausage, asparagus, black garlic, morel mushrooms, Comté cheese, Jura wines, Haut-Jura trout, Louhans chard, heirloom vegetables from Evelyne's, and market garden produce from the Val de Saône! Tasty, colourful notes and a wealth of riches to share.

Discover its many treasures in the cellar of our fine dining restaurant that features exquisite local vintages produced by winegrowers who have, in many cases, opted for biodynamic viticulture. For Joël Césari, this is a choice made from the heart and an essential environmental undertaking. 

The wine menu also features wines from other French vineyards, in all their diversity and character.
